Beyond the widespread appreciation for hilsa fish, the roe has emerged as a highly sought-after commodity in Bangladesh. At the Fishery ghat in Chattogram, laborers perform the meticulous task of extracting, organizing, and packaging the roe to maintain its quality. The market price for this delicacy fluctuates between Tk 3,000 and Tk 4,000 per kilogram, determined by the size and condition of the product. Once processed, the roe is preserved in ice-filled containers and distributed to markets in Dhaka and other regions across the nation. The collection process involves skilled workers carefully removing the roe from the fish, which is then sorted into plastic containers and prepared for transport in transparent packaging. This thriving trade highlights the economic value placed on hilsa roe, reflecting its status as a significant culinary product within the local fish industry.
